No, but do not worry so much about schema update. I did more often the last month from 2000 to 2003 and 2008 and also the exchange schema updates 2000 to 2003 and 2007 without any problem. The schema update will work or not and if not you get an error message to fix the problem.

Systme state backup includes everything. Is there a way which only
backup and
restore AD schema?

I'm working a productive AD domain with "adprep" procesure. In case
of
failure, I need to restore schema master.
Our AD is a single forest single domain network.

think round 10 from 2000, 2003 and 2008, with adding exchange 2003
and 2007 without any problems in different domain with different
security levels. Even if you get a problem during the upgrade, it
will just stop without changing anything. So you have a complete
upgrade or none.
