personally I hate OS upgrades, although supported, etc.
why I hate it? all kinds of (in)compatibility stuff and remember although easier --> CRAP IN = CRAP OUT
just hate it

Why not upgrade the servers? That is usually the easiest way.
for example if you dont have additional hardware
* install VM and make it a DC (this is just to have something to go back to after removing the old 2003 dcs and installing the new 2008 dcs)
* Export whatever is needed from the old 2003 DCs (e.g. DHCP stuff)
* Move whatever roles to the other W2K3 DC
* demote the w2k3 DC and remove from domain
* install w2k8, promote to DC
* install whatever is needed on that Dc
* move roles and features back or install
do the same with the other w2k3 dc
