Ok thanks again for the info Ziad. It is funny that you mention Server
2008. My boss and I were hesitant to install Server 2008 since it is so new,
so that is the reason we were upgrading to Windows server 2003. There is no
real reason that we have to be on Windows Server 2003, so if Windows Server
2008 is stable and reliable then I guess there is no reason for us to not
just upgrade straight to Windows Server 2008? If we did upgrade straight to
Windows Server 2008 I am assuming it would be the same process as to upgrade
to Server 2003?

Yes to still need to run adprep to prepare your forest and domain for the
installation of the first Windows Server 2003 DC. On Machine 3 you missed
saying that you will create a new zone after you install the DNS service. As
for DHCP Backup and Restore it is as simple as right click --> backup on the
original server, right click --> restore on the target server, I think you
have to create a scope first, you try it.
Good luck with you'r upgrade, do it fast, 2008 has much more features!!
