that I can first test the replication with both machine in main
office, where I don't right understand how it would work without
simulating a subnet.
Of course they will both work fine in one site/subnet - if you have multiple
DCs in a single office, that'show it would work. Set up the new site. When
you move the 2nd DC to the new / branch office, then move the server object
into the correct site.
Then rename your default site to something meaningful (e.g., "MainYou mean the current "standardname-of-the-first-site"?
