I got a promotion and i'm no more the Network Admin for my company.
I just ended training a new admin and i'm ready to give him all my
tasks. The problem is that i dont want him to be able to
see/manage/admin 2 folders on the server. These folders must be
accessible only by me and the boss. For what i know if he is an
administrator he can always take the ownership of these folders and
take all the right. Is it possible to have a folder on the network
that will be accessible only by me (simple user) and my boss (simple
user to).

Outside of encryption, no.
Bottom line: hire only admins you can trust. If you want someone to manage
your server/network for you, they need at least some form of access to the
data.
