I've been reading articles and books about AD. And, I thought that ADM
files are responsible for the Administrative Template node structure
for both user and computer configs. However, I recently figured out
that the ADM files also include some of non-Administrative Template
part of GPO. I just want to know which settings are not covered by
ADM files for the default GPO structure. Thanks!

How did you figure that out?
All settings made under ..\Administrative Templates\ are registry based and alter the target's registry. Other settings you can define, for example Software Installation, are managed by so-called "Client Side Extensions" (DLL extensions) that are responsible for processing those features.
