Global Catalog Server Configuration

I am looking for a recommendation on how to configure our Active Directory
Domain Forest.
We have only one Exchange Server here at our home site and three DCs. One
DC is allocated to our sister domain and the other two are dedicated to our
main domain. The Exchange Server houses mailboxes for both domains and as
of right now two of the three DCs are flagged as global catalog servers.
The other week we had a failure that caused our global catalog server for
our main domain to crash. This took down email till the DC was brought back
online.
Would it be recommended to flag both DCs for our main domain as global
catalog servers? According to Microsoft KB article 875427:
"For scalability and for fault tolerance, we recommend that you configure at
least two global catalog servers in each Active Directory site. If a site
spans multiple domains, we recommend that you configure a global catalog for
each domain where Exchange 2000 Server computers or Exchange Server 2003
computers and clients reside."
I agree with the first statement that we should have some form of fault
tolerance, that's why we configured two DCs for our main domain. But the
second sentence seems to contradict the first sentence by recommending only
one global catalog server per domain.
A little guidance on this subject would be greatly appreciated.
