You should have used DFS as Anthony said. But now that you haven't you could:
1: Use ADSIEdit to edit all of the GPOs and change the properties that point to the old location. If you do it this way then use DFS this time.
2: Rename the new server to be the name of the old server as Anthony suggests
3: Use a CNAME to point the old name to the new server, but you'd obvously need and identical share/file structure. Also beware that this wont work unless you disable strict name checking on the new server. http://support.microsoft.com/kb/281308

All Data is moved to SERVER01 and shares, etc.. is samelike how it was in SERVER02.
Now I need to change also GPO software deployment UNC paths if possible? ...one solution is make DNS record for SERVER02 and give SERVER01 ip-address, but I say this kind solution "bubble gum fix"....
