It is important to use a DFS path for software GPO's for this reason. A DFS
path would allow you to have more than one deployment source, and to replace
the physical server.
Now that you have a fixed UNC path, you will need to rename the file server
back to the old server name, once you have removed the old server.
It is possible to give the new server an alias of the old server name, but
clumsy.

...one solution is make DNS record for SERVER02 and give SERVER01
ip-address, but I say this kind solution "bubble gum fix"....
