You can create users and specify a SID, or you can utilise sIDHistory,
however only SID history will help if you've got a new domain as the
domain SID is going to be different. Again, you can change this but I'm
not sure of the supportability of that. Profiles are mapped via GUID
though, so you'll probably end up with a new profile even if you can
access the last one.

Your best bet is to disjoin these clients and add them to the new domain
again, and manually configure the profiles to use the old ones. I don't
know how practical that is, but based on the fact that you've only one DC
with no backup I don't imagine there's that many users.

That's not very helpful, sorry. Perhaps someone else has investigated
such a situation more than I and can offer alternate advice?
