The Group Policy processing knows whether a Group Policy was processed
successfully or not. If the software installation fails, it will mark the
policy as failed and try again.
Redeployment just processes the software installation again, even if it has
already been processed.
To get more information and reporting than this you need a third party tool
like Specops Deploy.

Software Installaion via GPO is logged in Event Viewer. Are there any

log files stored on the server or client?

How does AD know if the software has been installed? If the app set to be
redeployed how does AD know the if the app has been installed initially?
