Yes you can, but why would you??
There's nothing to gain from ip renumbering besides trouble.
Only renumber when you have to!

We currently have sites with 10.x.x.x subnets in 1 AD domain. Is it
possible to create a new site using a 192.168.x.x subnet or is it best
practice to change the range to a 10.x.x.x ?
