I'm not sure what you mean exactly by change the mapping. But it sounds
like you have discovered that you can refer to your AD domain by either its:
NetBIOS name = toby
-or-
FQDN name = polo.lib.ky.us
Nothing can be done to change this, it is normal.

we have a windows 2003 domain upgraded from 2000 which was upgraded
from nt4. our domain name is polo.lib.ky.us. it looks like an alia
name-toby was mapped to our domain name - polo.lib.ky.us. because i
could join our computers with either polo.lib.ky.us or toby where is
the setting in windows 2003 to change such mapping?
