To export your AD user and group information, look at csvde (built into the
OS), or adfind from www.joeware.net (freeware), both of which can export
information to a CSV format that can be opened in Excel. You can find the
syntax for csvde here:

The Group Policy Management Console (free download from
www.microsoft.com/gpmc) can create HTML reports of all of your GPO settings,
as well as creating backups of the objects themselves. The ~\Program
Files\GPMC\Scripts folder that will be created when you install GPMC will
have a number of canned scripts to do this automatically, including
"backupallgpos.wsf" to back up all of your configured Group Policy objects
in a single operation.
