Migration from Win2000 domain to Win2003domain

Hi all,
We are a small company that has just changed our company name. We need to
setup a new domain to reflect our new name and email addresses.
We already have a Windows2000 domain with the following servers:
1)Win2000 DC
2)Win2000 + Exchange2000
3)Win2000 + SQL2000
4)Win2000 Document server
5)Win2000 proxy
6)Win2000 Crystal reports server
and we have a spare server lying around with nothing on it.
We would like to have the new domain running on a Win2003 environment.
I have setup the new domain under a new forest on the our spare server and
setup 2-way trust between the old and new domains. I used the AD migration
tool to migrate/copy across groups and users from the Old domain to the new
domain. However I got a bunch of warning during the process saying that some
attributes were not migrated due to schema mismatch --- looks like all the
exchange properties and attributes were not copied because there is no
exchange server at present on the new domain.
Now here are a couple of questions:
1) How do I migrate across the exchange server and the user mailboxes from
the old win2000 forest/domain to the new win2003 forest/domain? will the fact
that the exchange attributes were not migrated over to the new domain with
the user migration cause problems when I do migrate the Exchange server.
2) Can someone please suggest the best way to approach this migration
keeping in mind that we are small company with very limited IT budget ? (
haha I am unix programmer but I also have the responsibilty of managing the
Windows network)
