Unless your environment is huge, and you want some serious 'horsepower'
behind your DCs (which don't *really* do a great deal ;-) then there's no
reason for Enterprise Version.
Enterprise Edition is more for high-availability, high-powered database,
mail or web servers.
Standard more than does the job of DCs, mail and file and print.
If you've less than...oh I don't know, 50,000 users, you don't need it with
a spread of as many DCs as you plan...

This design will have 3 DCs supporting the 5 roles on HQ and distributed in the WAN about 6 DCs. We are going with Windows 2003, but I was wondering if it could be Standard Edition for all servers. The only limitation between the two versions will be the amount of memory and CPUs supported, but I think I have enough with the hardware supported by the Standard Edition.
