Ok, I'll quickly answer the first question you have before I get into the
larger issue you bring up.

You can either rename the domain (assuming this is a Windows Server 2003
domain) using Microsofts domain rename tool, or if you haven't put any users
in this domain yet then I would format and re-install it. Now that you've
done it once it won't take long to do and I think is a better option than
going through the rename effort.

Now the larger issue is a design related decision. Typically the reason that
you have multiple domains in a forest is if you have groups within your
company umbrella that require different password policies. That is really the
main reason why you would create a subdomain and not too many people create
subdomains for any reason other than that. I would take a look at your
requirements and see if that is really the case, if it isn't and there is no
other compelling reason to go with a multi-domain model then I would just put
them all within the same domain and create a Site for each remote office.
This will make administration of your forest a lot easier and won't impact
the users experience.

Why don't you list out your reasoning for going with a multi-domain forest
and perhaps some folks here can comment on your reasoning to help you
determine the best choice for your situation.
