Typically, when using a set-top-box (STB) you connect separate video (RCA/S-Video/etc.) and audio (L/R RCA) connections. Some people do use and then tune the TV or Media Center to channel 3/4/etc. and the STB changes channels. It is possible that the coax out is only sending video, so you might try connecting the audio out to the audio input on the tuner.
BTW, it is unlikely that you were getting digital cable directly in the past if you were directly connected (no box) to the cable connection. It has only been in the last year or so that PC makers have released specialized Media Center systems that have a cable-card tuner; this allows direct connection to a digital source by renting a cable card from your provider.
Currently that is the only way to receive all the digital content through cable. You can receive Over The Air digital with an antenna and some digital card will receive unencrypted digital signals (Clear QAM) through coax, but generally those are only a small portion of the digital offerings. For instance, here in Orlando, if I plug in a Clear QAM tuner to Bright House (Time-Warner), it finds several hundred stations, but only about 35 can be viewed, the rest are locked.
