I'm afraid I don't think I can help as I use XP Media Center Edition (MCE)
2005, not Vista.
For MCE 2005, the instructions for burning a DVD are here -

There may be similar instructions for Vista, but if so, I don't know where
they are.
The issue for many people is that, in MCE 2005, they often only have the
ability to burn a data DVD, not a video DVD (as shown in item 6 in the
instructions linked to above).
In MCE 2005, this can be fixed by cliicking on the sonicencoders link given
in the earlier post, and downloading the zip file. Right clicking on the file
you have downloaded will give you the option to 'unzip' the file, which will
then give you a file calls sonicencoders.msi. Double clicking on that will
install sonciencoders, and then you will have the video dvd option. If you
select that, you should be able to produce a DVD that can be played on any
DVD player.

Nero 7 has MCE plugins to enable you to burn a DVD.
It also has Nero Vision, which provides extra video functionality outside
MCE - you can top & tail, cut out ads, fade between segments, provide a menu,
insert chapters etc etc. With a bit of effort, you can get a result which
doesn't look like you recorded it from the TV.
