Hi rajkohli, does Windows Media Center requires 2 video cards for me to
install 2 monitors? The reason I'm asking is that, on my other computer, I'm
running Windows XP professional and only have 1 video card, but I'm able to
extend my desktop under settings for 2 monitors, but I don't have that option
on my computer with the Media Center.

Before that let me explan you something. It seems that both of your display
cards and drivers are installed properly. Just see the link to check how to
extend the monitors.

Primary Monitor will be the main where all the objects will show up by
default. However, you can move them as required to another monitor.

Im using na ATI Radeon X600 with 256 memory and in the Display
Properties/Settings tab/Display Drop down Menu it shows up as No.1 on My
Primary LCD on Radeon X600 and as No.2 Default Monitor on Radeon X600
Secondary only when I choose No.2 does the Extend My Desktop Monitor show up
below Use This Device as Primary.Which If Anything should I do?

drivers properly for every display card in your PC.
