You can configure your second monitor (the tv) as a separate monitor using
the advanced properties of your video adapter (which adapter do you have, by
the way?). However, there are still problems...the Media Center app must run
on the primary monitor, so you need to select the tv and make it Primary.
Which means any time you fire up an app (unless it remembers where it was
last time you used it), it will start on the tv and you'll need to
click-drag it to the flat panel.

The other problem is that in Windows, only one app can have the "focus". So
when you have the focus on, say, Word, your husband's use of the remote
control will send those keys to Word, not to the Media Center.

I think you have two solutions...one is to use an Extender hooked to the TV,
which can show videos from your Media Center box. The other is to buy a
separate computer for yourself or your husband. I'm not sure what the
extenders cost, but an xBox or xBox 360 can be used as an extender.
Otherwise, you can get a perfectly acceptable new computer (with its own
flat panel) for under $400, especially if you keep your eyes open for "back
to school" deals in the next few weeks...
