By design, Media Center 2005 can only join a domain during a clean install. If you want the features of XP Pro, pay for Pro (MCE actually costs less).
However, there are work arounds:

My boss just bought an HP Media Center and asked me to set her up... Took.
awhile to get to the root of my problems, but I've now learned the XP Media
Center edition does not support joining a network domain. So my question
is... Is my boss now stuck with a PC that does the sexy media center stuff
but is worthless with respect to our network applications, or can I upgrade
this PC to XP Pro and still retain all the media center functionality?
