MCE as a whole house audio system too?

Looking into MCE in my media room and to get audio and video out to other
places that have a monitor. But, how about using MCE to just get music to my
in-ceiling speakers in a room that doesn't want/need video too? Can this be
done with the extenders? Any thoughts are appreciated.
