Well at least the S-video color signal from your NVIDIA card is fine since
composite works with the adapter. Another possible S-Video resolution option
is 720x480 since that is the format DVDs are normally recorded in and is
what MCE encodes at.
I have not tried configuring a DVI connection with the New NVIDIA software
but I was under the impression(but may be totally wrong,) that you could
select 480P or 1080i directly as long as the DVI cable was connected to the
TV and powered up when you try and configure the port since it try to sense
what the DVI port is connected to.
