Media Center sound

My motherboard includes a "6 channel" sound card. In addition, I have a Mad
Dog Multimedia 5.1 sound card I could install if necessary. Currently I have
speakers hooked to Front left/right. I have other speakers...
It looks like I can easily have two front and two rear speakers, using two
existing stereo speakers (one set Yamaha, one Harmon Kardon). Apparently the
center channel can be set to support a subwoofer, and I have one of those as
well.
If I hook up front/rear pairs, and hook the subwoofer to the center channel,
I should have some good audio. My question is, what can use this?
I assume regular live TV is stereo only, so I hear identical stuff on front
and rear speakers. Would the subwoofer get used at all? If I play a DVD, do
I then get better sound (i.e., quadraphonic)?
