Ah, but those options only apply if you are composing in Plain Text.
(Format menu, Plain Text). If in fact, you are composing in Rich Text (HTML)
it's the HTML Settings that you would want to change.

Check the source then. Check with both Ctrl-F3 and Ctrl-F2.
If the message is HTML perhaps even though it is not being sent with
Quoted Printable and even though the source is being written in
76 character lines unless there is a <br/> tag ending each line
the lines will all be concatenated and then still be able to flow across
any window width.
Is that what you're seeing? Keep describing for us what you are
doing and seeing. It's starting to become clearer.
