My feeling is that the key to the solution is to deselect "Group by Conversation", then sort by "Sent" and finally sort by "Sender".

I think kamtree wants the Subject to be alphabetically sorted.
Do a Find for the From name, then click on Subject.

I don't think you can sort on 2 columns. You can try sorting by date followed by sorting by From and see if that helps. Or you can use Edit | Find and search by From and specify a date range, or sort by date from the results.
