could set it to only download a portion of the headers, but if I do that I
will only be able to see some of the posts and miss some things I

That's probably not the right approach. Why not wait until you find
out if you need them? E.g. start out with a few thousand only.
Do not use Catch-Up. Do not later uncheck Get __ headers at a time.
For some time after you first do that it may still be possible to go back
for those undownloaded headers by using the Headers button
(or equivalently the Tools, Get Next... menu command).
The important thing to realize is that the maximum number you can
"go back" that way is not limited to the maximum value of the option
(e.g. 1000) but to the number of times you are willing to press the button.
Use the troubleshooting log to see how this command can step you
back into previously undownloaded messages. Similarly, you need
to be aware that pressing the button the first few times may not appear
to be doing anything because what you will be doing is moving the
requested number lower but still within the range of the numbers that
you have already downloaded. Frankly, I have never understood
why it can't remember where you last downloaded from and start there.
One (logical) possibility I suppose would be if the range that you are
traversing contains some holes in the sequence it may try to fill
those in. BTW some users have discovered that although you can't
change the maximum Get value to be greater than 1000 using the UI
it can be changed temporarily using the registry.
