There are two in particular to be careful to avoid: Ctrl-Enter and Alt-S.
In any case something which will help guard against it happening
even if you do hit those keys is set Work Offline while composing
(Alt-F,W). Then you can leave the option that Steve mentioned
checked so that when you are ready to click Send all you need to do
is toggle Work Offline back Online and it will go without you having
to do a separate Send/Receive operation.

Tip: You can add an Offline button to your toolbars to simplify these steps.
(Just don't click on the wrong button if the Send button is close to it. <eg>)
Another reason for having the button, even if you prefer to set Work Offline
by other means, is that it gives you a clear indication of the state of that
variable--e.g. the button appears depressed when Work Offline is set
and raised when it is not checked, regardless of how the change in state
was made--however, it may take a couple of seconds after a change
for the button to notice it and change itself appropriately.
