If you reply in 'rich text' it will also save the image and background.
If you reply in 'plain text' images will be lost.
with the email or news post open ...
Click 'Forward' ... you will see the 'to: address
Click File/Save As... and navigate to the file where you want it saved or
just save to 'Desktop'
When you open the saved email just revise or forward as is to ... your
desires.

How do you save a Stationerry so it also includes the e-mail address? I
type it in and hit 'Save' but doesnt save the address in the To: field.
