Well, I just proved to myself it is not a problem with the server
or the server security. I deleted my profile off the server and
logged in on another new workstation setup. Profile copied and
updated to the server fine on the other workstation. So, now it is
clear the problem is my computer itself.
What I don't get is when I take the laptop home I always get the
message that it can't find my copy of my server profile and gives me
the 30 second count down. This shows it is at least trying to
update. What I don't get is why I don't see any errors in the
Application, System, or Security logs on the laptop.

I can go to the folder from my workstation and delete and add to my
server copy of the profile, and I can do the same locally but the
changes don't propegate for me only. I have even downloaded
UPHClean to see if maybe my profile was still in use at shutdown
however this did not help the problem either. UPHClean says it
was successful every logoff.
No errors in the application or system log either.
I'd try the following tests:
Back up the server copy of the profile by making a copy of it
elsewhere On one computer, log in as another admin acct and delete
the cached profile
(or use delprof across the network)
Log in as yourself and let the server copy download
See if you can reproduce the problem
AND
Delete or ename the server copy of the profile
Log into a workstation that has a cached copy of the profile
Let it upload (log in/out/in)
See whether you can reproduce the problem
I use roaming profiles nearly everywhere and don't run into
problems with this. That said, with or without them, I strongly
suggest you use folder redirection for My Docs, Desktop and
Application Data - don't leave those in the profile path. Keep the
profiles
miniscule.

If I add an item to my desktop it adds fine,
but I can never get it to remove unless I go right to the stored
profile on the server.

the Domain Admins because I am constantly doing admin fuctions
throughout the day and want to use my own logon.
Check your event logs for errors. I suspect you've got permissions
problems on the roaming profile folder in question.
