I think what Anthony said was right on the target.

You could use $ character to hide the shared folder. To do this, type $ as
the last character of the share name. Other users cannot see this shared
folder when they search by using My Computer or Windows Explorer, but they
can map to the shared folder.

Moreover, if the OS version of your file server is Windows Server 2003,
Access-based Enumeration (ABE) might be an additional option.

Access-based Enumeration is a new feature that is included in Windows
Server 2003 Service Pack 1. This feature lets users of Windows Server
2003-based file servers to list only the files and folders to which they
have access when they browse content on the file server. This eliminates
the confusion that may occur when users connect to a file server, and then
they encounter lots of files and folders that they cannot access.
