If you install Windows 2003 it should create a dual boot where you can
select which operating system you want to boot to.

Thats how i would install it,but before you do,go to
run,type:diskmgmt.msc In msc,L.click on the new drive,go to
actions,all,select,"make drive active" close out msc.You should also
in advanced system properties,performance, virtual memory,set the new
drive to:"let system manage" click set 2X close out,restart
computer.Actually both hds should be set to that....
