Local Profile- How do I keep it???

So I'm doing a small NT4.0-2003 domain migration this
weekend. Right now all my users have their favorites,
some custom desktop icons, Outlook (with local PST), and
printers setup under their local profile. Is there
anyway I can make this stick? Our current domain is
X_Y_Z and our new domain name will be XYZ. Currently all
these settings are under:

c:\documents and settings\jsmith

When I did a test bed to 2003 and logged into the "new"
domain the folder that was created on SOME occasions was:

c:\documents and settings\jsmith.XYZ

Great now I have to reset passwords, logonto every system
as the individual, recreate printers, icons, setup
Outlook and import everything from their old local
profile. Any way around this? Thanks.
