After opening the picture in Paint. Look at the tools displayed on the left.
Click on the rectangle. Then click where you want to start the crop and drag
over the area you want to keep. Click on File and Save as.
Paint is not great for custom cropping.

Don't know how you scan, but can you avoid the white ears?
