If you change your screen resolution, it should retain the new setting. I assume you are clicking...Apply / OK?
Otherwise I don't know the answer...maybe the following articles will offer some ideas:

thanks John, this worked. I have to do this however, evry time I load in PS3..any way to fix it permanently? I have a 17" laptop as well, so I am using the settings you suggested and it resizes back to normal...but I have to do it every time. -- Fly Navy Corvette
