Selective startup is intended for diagnostic purposes, not as a way to run
your computer.
If the programs were correctly uninstalled and left behind startup entries,
you need to remove them from the registry manually.

Be extremely careful when working in the registry; there is no 'undo'
function. Create a backup point first, so you can easily restore your
registry if problems occur.
"Erratic startup" is an overly general term; you need to be more specific if
you want specific advice.
AOL Instant Messenger is the proprietary software of America Online. You'll
need to contact AOL for help with AIM. Same thing with Norton Antivirus;
you'll need to contact Symantec technical support.
