The only adapter that would be "guarantied" to work with the XBox 360
is the adapter that Microsoft has designed for it.

iMac wifi network "dongle" may never be usable within any XP version.

Noone ever wanted to do that. As you can still see above, the XP computer is connected with a cross cable to the iMac.

The other option mentioned would be to buy another "dongle" (I guess a USB wifi adapter).

You which to set up either an "ad hoc" (to PCs with no router to link
them) wireless network or set up "connection sharing" with the iMac
controlling the Internet access.

In the above mentioned scenario there is no need for an ad hoc wireless network. Either the XP is wired to the Mac or it connects wireless to the existing router in the other part of the house.

As I have posted before the function on Mac OS is called "Internet Sharing".
