Taking the second question first, if the computer with the shares is running
Simple File Sharing, you have to enable the Guest account. All network access
is as Guest.

Now, if you want to reset access to the default values, first delete the shares
that you want to reset. Next, Disable Simple File Sharing. Finally, add all
shares again. Or, you could use CACLS.
