I think you've nailed most of them with the exception of the multi protocol functionality
(aka Windows Messenger can sign into the .NET Messenger network, an Exchange IM Server or
Live Communications Server).
I'd suggest you read the following document as it details all the policies you can set as
well how to do the GPOs:

We have recently received a business requirement to install Messenger for
chat purposes only. I am trying to find out all the capabilities of Messenger
5.1 so I can work on disabling everything but the chat feature. Other than
chat, these are the features I'm aware of:
voice/video chat
instant messenger
file/folder sharing
application sharing
whiteboard
remote assistance
So, two questions. First, am I missing any features/capabilities, and
second, are there any readily available resources describing how to disable
these additional features? Thanks.
