In my Folders panel in Windows Explorer, is there any way to avoid displaying
(under "My Computer") the folders "Shared Documents" and "<My name>
Documents" (same as "My Documents", which is already listed right under
"Desktop")?

These entries are just two pointers to the same object. If you delete the
folder, it will disappear totally. However, you can hide it in 'Shared
Documents' by right-clicking on it, select Properties > Hidden > 'Apply
changes to this folder, subfolders and files'.
