How would I really see all of the programs that I have?

It appears that many of my programs/applications do not appear for ALL
PROGRAMS. (Windows XP with SP II) For example, I wouldn't know about some
programs that I have were the programs not on my desktop. I want top clean
up my desktop, but I should not do so until I clear up this matter.
How would I really see all of the programs that I have?
