Those are just the programs that you use more often. I'm not sure exactly about the "more often" part, but they are mostly stuff I use frequently.
If you mouse button 2 on them you get a list of options, including "remove from this list".

I tend to think of mouse button 2 (right in my case) as "What can I do with this?", and it usually offers what you want.

Sorry if I didn't phrase question correctly but I was referring to list under programs.
