It depends on how securely you want to erase the drive.

1. Just deleting the existing partition(s) and creating a new one
using the entire drive will make the drive appear to be empty. However
recovering the old contents, or at least most of it, would be a
relatively simple matter.

2. Single pass disk wiping utilities will overwrite the entire data
area of the disk, making recovery difficult but not impossible, given
enough time and money. This wiping will take a number of hours
(depending on the size of the disk)

3. Multi-pass disk wiping utilities will overwrite the entire data of
the disk a number of times, making any recovery extremely difficult
but still within the capabilities of government security services and
others with similar resources. This wiping could take a full day or
longer, depending on the size of the disk.

4. Physical destruction of the hard drive (crushing and shredding) is
the only way to be certain that the contents are beyond recovery.
