Easily explained - while consuming less bandwidth than w_tom will :-)
Lightning *always* takes the 'easiest' path to ground. You have observed cases where a UPS presented a 'harder' path, so the surge went through the 'unprotected' equipment.
w_tom is right - if you have a perfect grounding system, you have no need for additional protection. And you are right - in the real world of imperfect grounding systems, a UPS will often cause the surge to take another path, but not always, and if everything is on a UPS...
