I've done as follows:

Install new drive as slave to old drive (master/slave jumpers etc)
Booted DriveImage2002 and COPIED drive master -> slave
Powered down, jumpered new drive as master, didn't connect old drive at that
time
Booted, verified all was working, at which point I jumpered old drive as
slave and connected it
(All jumpering done with power off, off course)

With most new drives there should come a CD of floppy with manufacturer
provided disk copying program and manual (naturally, not necessary with bulk
disks)....
