Which files to backup?

The answer to this question might be painfully obvious to you and, if
so, perhaps you'll be kind enough to provide the answer.

In OSX, I backup my Home folder which contains all of my personal
data, eMail, bookmarks, music, pictures, movies, etc. Basically,
everything that I have created (and had the good sense to store in my
Home folder) gets backed up to another hard drive. If my Mac 's
internal hard drive craps out, I can replace it, reinstall the OS and
my apps, and bring the data from my Home folder back over without a
problem.

How do I do this in XP (and Vista, if this is different)? I realize
one might do a "clone" of the hard drive but, for the same of clarity,
let's assume I only want my data backed up because I don't mind
reinstalling my OS and apps.

I found a nice (free) app called Karen's Replicator and it appears to
do a proper backup (only replacing changed files, adding new ones,
deleting ones I've deleted from my source. I backed up the entire
"Documents and Settings" folder. Is this the folder that contains, for
example, Outlook's database? Have I already found my answer?
