Or just use something like ZZ instead of Z.

so the letter "Z" is it.. the VERY bottom character in sorting.. no other
symbol or character will place a file or folder name LOWER than something
titled with a Z ??

ZZ will put it at the end of the Z's and, therefore, at the bottom. If
you
have something already that starts with multiple Z's just give this an
extra
one.
