Thanks to both of you. I did know about adjusting the Mouse click speed.
Unfortunately this teaching usually goes on in Schools and Libraries and
access to Control Panel is restricted.

Don't think you can disable the rename function but you can adjust the
double-click speed setting (the speed at which Windows interprets a
double-click to open a folder or launch a program):
Control Panel-->classic view-->Mouse-->Buttons(tab)-->Double-click
speed(slider)
Move slider towards the left (slower) to make Windows interpret a slow
double-click as a 'normal' double click for opening a folder. Check the
setting by testing it on the folder icon next to the slider. If several
students use the same PC you'll need to set it for the student who
doubl-clicks the slowest. If all use separate PCs they can set it to
their own requirement.
