I am seeking to clear my desktop of items I use daily.

Good idea :-)

I am considering using Tololbars to organise the items in categories and locate the toolbars around my desktop.

I am seeking to gain a clearer understanding of Toolbar behaviour.

Your questions have been answered already, so I only would like to point you to the freeware "Free LaunchBar" ( http://www.freelaunchbar.com/ ).
It´s highly configurable and has a big advantage over the built-in toolbars since it lets you create submenus. Folders within a usual toolbar, in contrast, will open up as new windows and have to closed manually :-(

With the submenus of Free LaunchBar, you only need this one toolbar because you can group items within a submenu. This should help keeping your desktop tidy.
